Restaurant Spotlight

If you’re craving something flavorful but tired of the same old chicken sandwiches, VIVA Chicken is a welcome detour. The fast-casual Peruvian restaurant has quietly built a cult following for its “pollo a la brasa” — charcoal-roasted chicken marinated for over 24 hours in a house spice blend. Founded by chef Bruno Macchiavello and partner Randy Garcia, the first VIVA opened in Charlotte in 2013 and has since spread across the Carolinas, serving up bold, smoky flavor with a story behind every plate.

The star of the show is the rotisserie chicken — tender, juicy, and cooked over real flames until the skin crisps just right. It’s the kind of dish that makes you pause mid-conversation to figure out what seasoning they used and whether you can bottle it. Each order comes with a trio of sauces made fresh daily: aji amarillo for the mild crowd, huacatay for those chasing something herbaceous, and rocoto for the spice lovers. Together, they’re a masterclass in balance — heat, tang, and that subtle sweetness that keeps you coming back for another dip.

But VIVA Chicken isn’t only about what’s on the skewer. The sides are stars in their own right — jasmine rice with a hint of garlic, canary beans that taste like they’ve been simmering all day, and perfectly caramelized plantains that border on dessert territory. The menu also offers wraps, salads, and bowls for lighter options, but if you’re going for your first visit, the move is simple: get the chicken, grab a couple sides, and don’t skip the sauces.

So whether you’re grabbing a quick lunch or sitting down with family after work, VIVA Chicken hits that sweet spot between fast and fresh.

Featured Pup of the Week: Gloria 🐶

Meet Gloria, the senior pit mix who is a current resident of Dorchester Paws!

From Dorchester Paws:

“Gloria had the best day ever on her Doggy Date! 🍂🐶 Our senior sweetheart spent her day exploring fall decorations, meeting new people, enjoying pup cups, and soaking up all the love she could find. ❤️

Gloria is incredibly gentle with everyone she meets. She walks wonderfully on leash, rides great in the car, and just wants to be by your side. She’s low-energy, gets along great with other dogs, and would make the perfect companion for cozy evenings and slow strolls.”
